Free Range Pork
We have been unable to source organic pork locally at a reasonable price so all our pork is currently free range from Hampshire.
This means they are raised in the open in the same way as the organic pigs but do not have organic feed.
Cooks tip. How to make perfect crackling. Wipe the surface of the joint with kitchen paper to remove any excess moisture and store it uncovered. Wipe again just before cooking and rub generously with salt. Preheat your oven to a very high temperature and roast for 20 minutes before turning the heat down to the required level. Never baste the skin.
